Rhubarb Crumble

Earthy and simple, use seasonal and fresh rhubarb to cook this classic family dessert that will bring comfort and childhood memories at the dinner table.

  • 1 bunch trimmed rhubarb, cut into 1.5 in pieces
  • 14 oz strawberries
  • 7oz unsalted butter
  • 1 ⅔ cups plain flour
  • 1 ⅔ cups rolled oats
  • 1 ⅓ cups caster sugar
  • 2.5 oz flaked almonds
  • 2 tbsp yoghurt of your choice


  • Place trimmed and cut rhubarb, strawberries into a saucepan with ⅔ caster sugar over medium heat and cook for about 10 minutes or until softened
  • Remove from heat and set aside to cool
  • To make the crumble, place oats, flour, butter, and flaked almonds in a bowl with the remaining caster sugar. Mix together with your hands to form a crumbly topping
  • Transfer the fruit mixture to a lined baking dish and top with crumble
  • Bake for 20 minutes at 360°F and increase oven to 400°F and bake for a further 15 to 20 minutes or until golden and crunchy
  • Add 2 tbsp yoghurt in a bowl and serve crumble
