
Rhubarb Crumble
Earthy and simple, use seasonal and fresh rhubarb to cook this classic family dessert that will bring comfort and childhood memories at the dinner table.

Ingredients:
- 1 bunch trimmed rhubarb, cut into 1.5 in pieces
- 14 oz strawberries
- 7oz unsalted butter
- 1 ⅔ cups plain flour
- 1 ⅔ cups rolled oats
- 1 ⅓ cups caster sugar
- 2.5 oz flaked almonds
- 2 tbsp yoghurt of your choice
Method:
- Place trimmed and cut rhubarb, strawberries into a saucepan with ⅔ caster sugar over medium heat and cook for about 10 minutes or until softened
- Remove from heat and set aside to cool
- To make the crumble, place oats, flour, butter, and flaked almonds in a bowl with the remaining caster sugar. Mix together with your hands to form a crumbly topping
- Transfer the fruit mixture to a lined baking dish and top with crumble
- Bake for 20 minutes at 360°F and increase oven to 400°F and bake for a further 15 to 20 minutes or until golden and crunchy
- Add 2 tbsp yoghurt in a bowl and serve crumble
