
Beetroot Spread
Add a pop of colour (and hit of flavour!) to your plate with an earthy beet spread that will look beautiful on a picnic table! Serve it with your favourite pita bread or crackers for more crunch.
Serves: 6 or ⅔ cup
Preparation time: 1hs
Ingredients:
- 4 large peeled beetroots
- 1 garlic clove
- 1 tsp of cumin seeds
- 1 tsp of coriander seeds
- Salt and pepper
- ⅓ cup of yoghurt
- ½ juice of a lemon
- Salt and pepper to taste
Method:
- Boil beetroots until tender and peel
- On medium-low heat, add the cumin and coriander seeds and cook until fragrant
- Roughly chop the beetroot, garlic
- In a food processor, combine all the ingredients, add lemon juice
- Process until smooth
- Season to taste
Tip: Keep the beetroot leaves for a salad or a pesto!
