Baked Apples

This baked apple recipe is for you if you’re looking for an easy, sweet, comforting dessert to bid farewell to Summer. Pink Ladies and Granny Smiths are great baking apples, but you can choose any kind you like as long as it has a firm texture and a good bit of acidity.

 

Serves: 4

Preparation: 20 minutes 

Cooking time: 30 minutes

 

Ingredients:

  • 4 large apples
  • 1 tsp cinnamon
  • ¼  cup walnuts
  • ¼  cup currants or chopped raisins
  • ¼ cranberries
  • ¼ dried coconut
  • ¼ dried grapefruit
  • 3/4 cup boiling water

Method:

  • Preheat oven at 375°F
  • Scoop out some of the inside with a melon baller or a spoon
  • Place the dried fruits, cinnamon and walnuts in a small bowl and stir to combine
  • Stuff apples with the fruit and nut mix
  • Place apples on lined baking tray and into the oven
  • Pour boiling water into the bottom of the baking dish to steam the apples
  • Bake at 375°F (190°C) for 30 to 45 minutes, until the apples are cooked through and tender, but not overcooked and mushy
